Everything is in the title… Accidently removed SSL sharing on a domain, and I just would like to know how to enable it again for my subdomains.

Since you have not shared how exactly you accidentally disabled SSL, I will assume you went to Virtualmin → Edit Server and unchecked the SSL box there
If so, check that box and then apply a SSL certificate to the virtual server; Virtualmin should take care of the rest.
