Looking for suggestions on how to tackle this…
I was working on a php site and was getting error but when I looked in the logs the latest entry was Jan 07 around 3:30. I checked all of my virtual hosts and the same no log entries after Jan 7. I know for a fact there are other developers working on some of these vhosts and they are saying the same thing.

I checked the home/logs error_log - empty. When I try to do a TAIL at the cmd line on the error_log it just hangs - wont connect. Little stuck as to how I should approach this issue.

Looks like I needed to do an update /upgrade - long overdue
Logs are working as normal

I’ve never seen logs in this location.
system logs should be in
/var/logs
virtual server log are in
/home/yourdomain/logs/

under home should be the virtualservers folders

Yes that is what I meant to write: /home/yourdomain/logs/

you do have logging on?

in general, at times I have seen logs stop recording – often restarting apache and/or the php-fpm service has fixed it for me — your mileage may vary
