I’ll enable my users to manage their own servers within their backend.
Each user should only see his/her own entries.

That should be a feature you can enable in Usermin.
To configure whether it’s available, you can log into Virtualmin, and go to Webmin -> Webmin -> Usermin Configuration -> Usermin Module Configuration -> Fetchmail Mail Retrieval.
If that’s enabled, you should be able to access it from within the Usermin interface.
