Is this a new or old install that has just started acting up?
What OS?
Is everything up to date?
Are the sent folders actually empty or just not showing? With IMAP maybe they all somehow became unsubscribed?

Its an old build that was working until 14th Friday Feb.

Everything updated. Infact I rebooted my server on friday.
Old sent emails exist, but new sent emails are not there.
No imap are set up, using this server for personal stuff.
Your mail client is generally what puts mail in a “sent” folder, not the mail server. So, what mail client are you using?
Currently im using virtualmin to access and compose email. (Dont laugh). It works for me.
Usermin is the default webmail client in a Virtualmin system, and it supports putting sent mail into a configurable sent folder.
While you can send and read mail in Webmin’s Read Mail module (which is linked from various places in Virtualmin), it’s not configured for use as a daily driver mail client. You might be able to configure it to use a sent folder (it’s basically the same code as in Usermin, but I’m not sure, as I use Usermin when I need webmail, generally speaking.
Are you sure you were using Webmin Read Mail when you were getting mail put in a sent mail folder before? I’m pretty certain it’s not configured to do that by default, and I don’t see any way to enable it. Maybe you were using Usermin (on port 20000) in the past and now using Webmin?
I just tested and Virtualmin won’t use sent folder but usermin does.

I disabled usermin, maybe thats when the email stopped.
I re-enabled webmin, then gave the account webmin access. unfortunately it still doesnt keep a copy in .sent
