Currently my install is displaying the brown color pallet for the Authentic Theme. Where is the option to select one of the other color pallets as show on the git hub page for the theme.

It’s in Theme Configurations > Navigation menu options. You can get there by going to Webmin > Webmin Configuration > Webmin Themes or clicking cogs button in navigation menu, near current login name.
