Newb question: why multiple php processes for each virtual server?

Looking at my list of running processes I see that most of the virtual hosts on my server (all wordpress) are running multiple instances of /opt/rh/rh-php73/root/usr/bin/php-cgi - is that normal? I thought that each site would get a single jailed php instance.

Yes, it is normal. It’s how PHP handles multiple client requests simultaneously. They’re pre-spawned for performance. Apache has multiple processes, too.
