Hi. I have moved to another (cheaper) server and have installed VM again after I deleted the old server that had 7 Pro on it. Do I need to do anything to update the server I am using so the licence remains valid on my new server?

Nope.
You may see a warning about multiple servers using the license for a while after the old one goes away, but it will clear on its own, and it does not impact functionality in any way and only root sees the message. We have no problem with the license running on multiple machines during migrations and the like. As long as you’re using the license in good faith, we’re happy and the license system should be happy.
