I know Virtualmin picks a default directive for hostnames that point to the IP but don’t have an Apache host setup. Is this easy to change within Webmin (don’t want to mess with the files)? And how is this set by Webmin/Virtualmin? Is it set for the first created virtual server? Or the first on the server in alphabetical order?

Apache handles default domains simply by using the first domain it sees as the default.
So, in Apache’s configuration, whichever shows up first is the default domain.
You can ask Virtualmin to rearrange those for you to make another domain the default by going into Server Configuration -> Website Options, and set that domain as the default for that IP address.
