Im perfoming a full backup every week, and a incremental one every day, since i installed a new virtualmin for just restore as a backup server i tried to restore from the original files, the restore was 100% ok but the email data wasnt there, any suggestions?

Hrm, email should be backed up in any backup that includes a users home directory.
During the backup process, it just uses tar in order to backup the home directory – it doesn’t skip over things like email, as they’re all considered just “files” in the homedir.
If you look at the contents of the full backups you’re performing, can you see any files that exist within the “Maildir” directory?
