In this post http://www.virtualmin.com/node/11163, andreychek clearly details how to tweak the webmail and admin redirects for virtual servers that have not yet been created, i.e., via changes to Server Templates.

My question is this: How do I make such changes to an existing virtual server?

For that, you need to edit the Apache virtual host directives for the server - under Virtualmin / Services / Configure Website / Edit Directives. Look for the respective RewriteCond/RewriteRule pairs.
